I’m Mrs Mindful Bakes, aka Laura Jackson. I’m a married thirty something year old to a long suffering husband who enjoys nothing more than flinging a brace of pheasant over his shoulder and trudging through the muddy countryside. I’m a dedicated, wine loving mummy to two little girls, my third fur baby (as Hubbie decided to buy me a dog to stop be becoming broody for baby #3) countrygirl who loves anything creative; be it music, baking, arts and crafts, fashion, make up and travel. Not sure what it is yet but inbetween baking I thought I’d share my ponderings on life with two girls, my love of the Wiltshire countryside, my adventures with my girls, my attempts to declutter and de stress my life and of course my bakes.
I studied for an Open university degree covering subjects such as different therapies , childhood and youth development. This involved six different placements across the UK in various settings such as hospitals, community centres. I have worked as a special needs teaching assistant in both mainstream and specialist private schools and a carer so I have a wealth of experience in working with children, particularly with additional needs. One of the best experiences I had was working two consecutive summers for Camp America based in the Adirondack mountains. Whilst on maternity leave with both of my daughters I set up a specialist nanny agency for families struggling to find a nanny for their special needs child.
Out of my maternity leave also sprung a passion for baking. I was cooking so much for my family that it allowed me to practice and create new dishes and i found a new confidence and hobby. Mindful bakes was set up in July 2017 and I’ve been working in it ever since! I am always looking to collaborate with local companies and work with schools so get in touch!
